Beverages

Producing quality wines, recognized and awarded requires dedication, knowledge and technology. Environmental conditions impact the vine in all its phenological stages, making it difficult in some vintages to produce wines with the sensory profile desired by consumers. A production combined with tannins and polyphenols can be essential to give structure and longevity to the wine.

FAQs - Frequently Asked Questions

What are natural polyphenols?

Polyphenols are organic compounds found mainly in plants and fruits, which have the function of protecting them against insects, ultraviolet radiation and microbial infections.

Tannins are polyphenols of plant origin, with molecular weights generally between 500 and 3000 atomic mass units. They are classified as hydrolysable or condensable, according to their carbon skeleton.

Hydrolysable tannins are made up of several molecules of phenolic acids, such as gallic and ellagic. They are called hydrolyzable, since their ester bonds are susceptible to hydrolysis by acids or enzymes.

Condensed tannins are made up of flavonoid units, with different degrees of condensation. They are compounds that are more resistant to fragmentation.

The tannins present in Black Acacia are of the condensed type.

A proper balance achieves an improvement in the aromatic expression and structure of the wines. Enological tannins are divided into two categories:

• Condensed tannins: Offer excellent antioxidant protection and color stabilization, in addition to enhancing the structure and body of wines.

• Hydrolyzable tannins: Offer exceptional antioxidant protection and help with difficult clarifications due to their high attraction to proteins.

Yes! They are compounds that have high antioxidant action, acting in the capture and blocking of free radicals, reducing or preventing their action in the animal body.

In antiquity, wines produced with grapes with higher tannin content were valued for supporting travel and, even after months of production, maintaining their original quality.

Yes! The biggest health benefits that tannins offer are from their antioxidant and anti-inflammatory properties.

Although scientific studies are just beginning to demonstrate the health benefits of tannins and polyphenols contained in wine, several benefits have already been proven.
